Spinach Spaetzle

I wouldn’t feed my livestock dried pasta but I will make my own Spaetzle.  I blanched some spinach and then put it in the food processor with flour and eggs.  that made a nice runny dough to pass through a cheese grater.  I boiled shortly and added the Spaetzle to the pan which had sauteed onions, garlic, peppers, criminis, and broccoli.  I topped with some Norwegian triple cream cheese.

We drank a 1998 Rioja.
