Wild King Salmon Collar with Peanut Curry

Making your own peanut curry isn’t too hard.  You need some peanut butter, soy sauce, garlic, ginger or galangal, chilies, pimenton, lemongrass, anchovy paste (because, who has fish sauce laying around?), cinnamon, and whatever else you want.  I sauteed up some red onions, yellow peppers, and asparagus and added the peanut sauce to accompany broiled salmon collars.  Salmon and peanut sauce go together really nice as long as you get enough acid in the sauce.

We drank some hoppy beer.  I’m not too much a fan of excessive hops but these guys pull it off better than most California beers.
