If we take the definition of a religion to be something that:
- Varies from region to region but has a unifying theme
- Brings a people and a culture together
- Encourages people to be more moral
- Speaks to the soul
- Is a historical institution of rituals involving a set of beliefs and practices that vary by interpretation
Then my religion is Cassoulet.
For this interpretation, I braised Diestel turkey legs in olive oil, garlic, nutmeg, black pepper, duck stock, and pimenton. Separately, I caramelized onions. I deboned the legs, reduced the liquid, then added canneleni beans to the meat. Lastly I added the onions, some green onions and cooked to complete. Adding a 50/50 mix of breadcrumbs and Comte, I finished it under a broiler and served.
