Smoked Salmon Fritatta

With house smoked salmon leftovers, I made a breakfast omelette.  I added leftover Roule cheese, leftover Charmes (like Port Salut), and leftover Beecher’s No Woman.  I then topped it with some leftover Pesto made from the garden.  it’s based on oregano, contains no basil and has some sage.  I used a raw milk portugese cheese.
