So I have a huge rosemary bush that isn’t good for much other than smoking food. I bought some wild king collars for .99 a pound. I made a rub with pimenton, garlic, brown sugar, cumin, and salt. lit some hickory lump and smoked the salmon for over rosemary for 20 minutes. Salad was asparagus, potatoes, and goat cheeese with Chervil vinagrette.
We drank Gewurtztraminer.
I prefer the bellies but collar will do. The bellies go well with peanut sauce.
